Ingredients

  • 1 pound ground beef
  • 2 tablespoons olive oil
  • 1 medium, diced onion
  • 3 minced garlic cloves
  • 1 medium, diced red bell pepper
  • 3 tablespoons soy sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon black pepper
  • 1 cup long-grain white rice
  • 2 cups water
  • 1 teaspoon salt
  • 3 stalks, chopped green onions

Directions

Step 1

In a medium saucepan, combine the rice, water, and salt. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and let it simmer for 18-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes, then fluff with a fork.

Step 2

While the rice is cooking, heat the olive oil in a large skillet over medium-high heat.

Step 3

Add the diced onion and sauté for 3-4 minutes until softened.

Step 4

Add the minced garlic and diced red bell pepper to the skillet and cook for another 2 minutes, stirring frequently.

Step 5

Push the vegetables to the sides of the skillet and add the ground beef in the center. Break it up with a spatula and cook until browned and fully cooked, about 6-8 minutes.

Step 6

Stir in the soy sauce, tomato paste, cumin, paprika, and black pepper. Mix well until everything is combined and cook for another 2 minutes to allow the flavors to meld.

Step 7

Turn off the heat and stir in the chopped green onions.

Step 8

Serve the savory ground beef over the cooked rice. Garnish with extra green onions if desired.
