Ingredients

  • 2 tablespoons olive oil
  • 0.5 cup, diced red onion
  • 0.5 cup, diced red bell pepper
  • 0.5 cup, halved cherry tomatoes
  • 1 cup baby spinach
  • 2 large flour tortillas
  • 1 cup, shredded dairy-free cheese
  • 0.5 cup cooked black beans
  • 1 avocado
  • 0.25 cup salsa
  • 0.25 teaspoon ground cumin
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon salt

Directions

Step 1

In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Step 2

Add the diced red onion and bell pepper to the skillet and sauté for about 3 minutes until they start to soften.

Step 3

Add the halved cherry tomatoes, baby spinach, ground cumin, black pepper, and salt. Cook for another 3 minutes until the spinach is wilted.

Transfer the sautéed vegetables to a bowl and set aside.

Wipe the skillet clean and add the remaining tablespoon of olive oil. Warm it over medium heat.
