Drain the tofu and wrap it in a clean kitchen towel or paper towels to remove excess water. Set aside for about 5 minutes.
While the tofu is draining, dice the red bell pepper and yellow onion. Halve the cherry tomatoes, and chop the fresh cilantro.
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and bell pepper and sauté for 3-4 minutes until they begin to soften.
Add the plant-based sausage crumbles to the skillet and cook for another 5 minutes, stirring occasionally. Remove the sausage mixture from the skillet and set aside.
Using your hands, crumble the drained tofu into a bowl. Add nutritional yeast, turmeric powder, ground black pepper, and salt to the crumbled tofu. Mix well to incorporate the spices.
In the same skillet, add the remaining tablespoon of olive oil and bring to medium heat. Add the seasoned crumbled tofu and cook for about 5 minutes, stirring occasionally, until the tofu is heated through and starts to slightly brown.
Combine the cooked tofu with the sausage and vegetable mixture in the skillet, stirring to mix all ingredients well.
Warm the flour tortillas in a separate pan or microwave until they are pliable.
Slice the avocado and cut the lime into wedges.
To assemble the burritos, place about 1/4 of the sausage and tofu mixture onto each tortilla. Top with avocado slices, cherry tomatoes, chopped cilantro, and a squeeze of lime juice.
Add a couple of spoonfuls of salsa to each burrito before wrapping it up tightly by folding the sides over the filling and rolling it up.
Serve immediately with any remaining salsa and lime wedges on the side.
