Ingredients

  • 4 links Dairy-free sausage
  • 1 tablespoon Olive oil
  • 1 medium Red bell pepper, diced
  • 1 medium Yellow onion, diced
  • 2 cups Baby spinach, chopped
  • 6 large Eggs
  • 0.25 cup Almond milk
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Tomato salsa
  • 4 pieces Large flour tortillas

Directions

Step 1

Heat olive oil in a large skillet over medium heat. Add the diced red bell pepper and yellow onion, and cook for about 5 minutes until they are softened.

Step 2

Slice the dairy-free sausage links into small pieces and add them to the skillet. Cook for an additional 5-7 minutes until the sausage is browned.

Step 3

Add the chopped baby spinach to the skillet and cook until wilted, about 2 minutes.

Step 4

In a mixing bowl, whisk the eggs with the almond milk, salt, and black pepper until well combined.

Step 5

Push the sausage and vegetable mixture to one side of the skillet and pour the egg mixture into the empty side.
