Ingredients

  • 2 pieces Dairy-free croissants
  • 2 pieces Plant-based sausage patties
  • 2 large Eggs
  • 2 slices Dairy-free cheddar cheese slices
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 cup Spinach leaves

Directions

Step 1

Preheat the oven to 350°F (175°C).

Step 2

Place the plant-based sausage patties in a non-stick pan over medium heat. Cook for 4-5 minutes on each side or until browned and heated through. Remove from the pan and set aside.

While the patties are cooking, whisk the eggs in a small bowl with salt and black pepper.

In the same pan, add 1 tablespoon of olive oil and heat over medium-low. Pour in the whisked eggs and stir constantly with a spatula to scramble until fully cooked but still soft, about 3-5 minutes.
