Ingredients

  • 250 grams all-purpose flour
  • 7 grams active dry yeast
  • 150 milliliters warm water
  • 10 grams sugar
  • 5 grams salt
  • 30 milliliters olive oil
  • 100 grams sardines in olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 15 milliliters lemon juice
  • 15 grams parsley, chopped
  • 1 pinch black pepper

Directions

Step 1

In a small bowl, combine 150ml warm water with 7g active dry yeast and 10g sugar. Stir gently and let it sit for about 10 minutes until it becomes frothy.

Step 2

In a large mixing bowl, combine 250g all-purpose flour and 5g salt. Make a well in the center and pour in the yeast mixture and 30ml olive oil.

Step 3

Knead the mixture until a smooth dough forms, about 8-10 minutes. Cover the bowl with a damp cloth and let it rise for 1-1.5 hours in a warm place, or until it has doubled in size.

Step 4

While the dough is rising, drain the sardines (100g) and mash them in a bowl. Finely chop 1 medium onion and mince 2 cloves of garlic.

Step 5

In a small pan, heat a little olive oil over medium heat. Sauté the onion and garlic until tender, about 3-4 minutes. Add the mashed sardines, 15ml lemon juice, 15g chopped parsley, and a pinch of black pepper. Cook for another 2 minutes until well combined. Remove from heat and let cool.

Step 6

Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.

Step 7

Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a ball, then flatten into a small disk. Place a spoonful of the sardine filling in the center of each disk.

Step 8

Fold the edges of the dough over the filling and pinch them together to seal, forming a bun shape. Place the buns seam-side down on the prepared baking tray.

Step 9

Cover the buns loosely with a damp cloth and let them rise for another 20 minutes.

Step 10

Bake the buns in the preheated oven for 20-25 minutes, or until golden brown.

Step 11

Remove from the oven and allow to cool on a wire rack before serving.
