Ingredients

  • 14 oz Canned salmon, drained
  • 1 cup Breadcrumbs
  • 3 stalks Green onions, finely chopped
  • 0.25 cup Fresh parsley, finely chopped
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Lemon zest
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 Egg
  • 2 tablespoons Olive oil

Directions

Step 1

In a large mixing bowl, combine the canned salmon, breadcrumbs, chopped green onions, parsley, Dijon mustard, and lemon zest.

Step 2

Season the mixture with garlic powder, onion powder, salt, and black pepper. Mix well to combine all ingredients.

Step 3

Crack the egg into the bowl and thoroughly mix it into the salmon mixture to help bind the ingredients together.

Step 4

Divide the mixture into 8 equal portions and shape each portion into a compact patty, about 1/2 inch thick.

Step 5

Heat the olive oil in a large non-stick skillet over medium heat.

Step 6

Once the oil is hot, carefully place the salmon patties in the skillet, being careful not to overcrowd the pan.

Step 7

Cook the patties for 4-5 minutes on each side, or until they are golden brown and heated through.

Step 8

Remove the cooked patties from the skillet and let them drain on a plate lined with paper towels.

Step 9

Serve warm with your choice of dairy-free sauce or side salad.
