  • 1 tablespoon fresh dill
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 large egg
  • 1 tablespoon all-purpose flour

Directions

Step 1

Preheat your oven to 200°C (400°F).

Line a baking sheet with parchment paper.

Step 3

Lightly dust a clean surface with flour and roll out the dairy-free puff pastry to about 4mm thickness.

Step 4

Divide the pastry into four equal rectangles.

Step 5

In a bowl, mix the dairy-free cream cheese with fresh dill, lemon zest, salt, and black pepper until well combined.

Step 6

Place a salmon fillet in the center of each pastry rectangle. Season the salmon with a small pinch of salt and pepper.

Spread a tablespoon of the cream cheese mixture over the top of each piece of salmon.

Layer a small handful of baby spinach leaves on top of the cream cheese.

Step 9

Fold the pastry over the salmon, and seal the edges using a fork to crimp and ensure the parcels are secured.

Beat the egg in a bowl and brush the top of each pastry parcel with the beaten egg to give a golden finish.

Step 11

Transfer the pastry parcels to the prepared baking sheet.

Step 12

Bake in the preheated oven for 20-25 minutes until the pastry is golden brown and cooked through.

Step 13

Remove from the oven and let them cool for a few minutes before serving.
