Ingredients

  • 400 grams Salmon fillets, skinless
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 medium Onion, finely chopped
  • 3 Garlic cloves, minced
  • 250 grams White mushrooms, sliced
  • 3 cups Cooked white rice
  • 1 can (400 ml) Coconut milk
  • 1 cup Chicken or vegetable broth
  • 2 tablespoons Nutritional yeast
  • 1 tablespoon Lemon juice
  • 1 teaspoon Dijon mustard
  • 2 tablespoons Chopped parsley, for garnish

Directions

Step 1

Preheat the oven to 200°C (400°F).

Step 2

Season the salmon fillets with salt and black pepper.

Step 3

In a large skillet over medium heat, add 1 tablespoon of olive oil. Sear the salmon fillets for about 2-3 minutes on each side until golden brown. Remove from the pan and set aside.

In the same skillet, add the remaining olive oil. Add the chopped onion and sauté for 2-3 minutes until translucent.

Add the minced garlic and sliced mushrooms to the skillet. Cook for an additional 5 minutes until the mushrooms are tender.
