  • 500 grams salmon fillet, skinless and boneless
  • 0.5 cup red onion, finely chopped

  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 0.5 cup gluten-free breadcrumbs
  • 1 unit egg, large
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground
  • 2 tablespoons olive oil
  • 4 units dairy-free burger buns
  • 4 units lettuce leaves
  • 1 unit tomato, sliced
  • 0.25 cup dairy-free mayonnaise

Directions

Step 1

Cut the salmon fillet into chunks and place in a food processor. Pulse several times until finely chopped but not pureed.
