Ingredients

  • 1.5 cups white basmati rice
  • 0.5 teaspoons saffron threads
  • 2 tablespoons hot water
  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 3 cups vegetable broth
  • 1 teaspoon salt
  • 0.25 teaspoons ground black pepper
  • 1 cinnamon stick
  • 1 bay leaf
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.

Step 2

In a small bowl, soak the saffron threads in 2 tablespoons of hot water for at least 10 minutes.

Heat the olive oil in a medium-sized pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Add the minced garlic to the pot and sauté for another minute until fragrant.

Stir in the rinsed basmati rice, ensuring each grain is coated with oil, and cook for another 2 minutes.
