Ingredients

  • 210 g all-purpose flour
  • 50 g granulated sugar
  • 0.5 tsp salt
  • 80 g coconut oil, solid
  • 60 ml cold water
  • 3 medium apples (such as Granny Smith or Honeycrisp)
  • 1 tbsp lemon juice
  • 50 g brown sugar
  • 0.5 tsp ground cinnamon
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 tbsp almond milk
  • 1 tbsp turbinado sugar (optional, for sprinkling)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

To make the crust, combine flour, sugar, and salt in a mixing bowl.

Step 3

Add solid coconut oil and using your fingers or a pastry cutter, cut the oil into the flour mixture until it resembles coarse meal.

Step 4

Drizzle in cold water, a little at a time, tossing the mixture with a fork until dough holds together when pinched.

Step 5

Form the dough into a disk, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.

Step 6

While the dough is chilling, peel, core, and thinly slice the apples.

Step 7

In a separate bowl, combine sliced apples with lemon juice, brown sugar, cinnamon, cornstarch, and vanilla extract. Mix well to coat the apples.

Step 8

Once chilled, roll out the dough on a lightly floured surface into a circle about 12 inches (30 cm) in diameter.

Step 9

Transfer the rolled-out dough onto a baking sheet lined with parchment paper.

Step 10

Arrange the apple mixture in the center of the dough, leaving a 2-inch (5 cm) border around the edges.

Step 11

Fold the edges over the apples, pleating as necessary to create a rustic border.

Step 12

Brush the crust with almond milk and sprinkle with optional turbinado sugar for extra crunch and sweetness.

Step 13

Bake the galette in the preheated oven for 35-40 minutes, or until the crust is golden brown and the apples are tender.

Step 14

Remove from the oven and allow to cool slightly before slicing. Serve warm or at room temperature.
