Directions

Step 1

Start by soaking the raisins in the dark rum. Combine them in a small bowl and let them sit for at least 30 minutes to 1 hour before you start the recipe. This allows the raisins to absorb the rum and plump up.

Prepare a bain-marie by filling a pot with a small amount of water and bringing it to a simmer. Place a heatproof bowl over the pot, ensuring the water does not touch the bowl.
