Ingredients

  • 1 whole Cooked rotisserie chicken
  • 2 units Celery stalks
  • 0.5 medium Red onion
  • 1 cup Red grapes
  • 0.5 cup Sliced almonds
  • 0.25 cup Fresh parsley
  • 2 tablespoons Dijon mustard
  • 0.75 cup Dairy-free mayonnaise
  • 2 tablespoons Lemon juice
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Remove all the meat from the rotisserie chicken and chop it into bite-sized pieces, discarding the skin and bones. Place the chopped chicken in a large mixing bowl.

Chop the celery stalks into small pieces. Dice the red onion finely. Halve the red grapes.
