Ingredients

  • 12 oz rotini pasta
  • 2 tbsp olive oil
  • 1 medium, chopped yellow onion
  • 3 minced garlic cloves
  • 28 oz canned crushed tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.5 tsp dried thyme
  • 0.25 tsp red pepper flakes
  • 1 tsp sea salt
  • 0.5 tsp black pepper
  • 0.25 cup chopped fresh parsley

Step 1

Bring a large pot of water to a boil and add a pinch of salt. Once boiling, add the rotini pasta and cook according to package instructions until al dente (usually around 8-10 minutes). Drain and set aside.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 5-7 minutes until the onion becomes translucent.

Add the minced garlic to the skillet and cook for another 1 minute until fragrant.

Step 4

Pour in the crushed tomatoes and stir to combine with the onion and garlic.

Step 5

Add the dried oregano, dried basil, dried thyme, and red pepper flakes to the tomato sauce. Season with sea salt and black pepper, and stir well.

Step 6

Lower the heat to a simmer and let the sauce cook for about 15-20 minutes, stirring occasionally, until it thickens slightly.

Step 7

Taste the sauce and adjust seasoning if needed.

Step 8

Add the cooked rotini pasta to the skillet and toss to coat the pasta evenly with the tomato sauce.

Step 9

Garnish with chopped fresh parsley.

Step 10

Serve hot and enjoy your Dairy-Free Rotini Pasta with Tomato Sauce!
