  • 3 pounds beef roast (such as chuck or top sirloin)

  • 1 teaspoon dried rosemary
  • 1 yellow onion, sliced
  • 3 cups low-sodium beef broth
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C).

In a small bowl, combine salt, black pepper, garlic powder, onion powder, dried thyme, and dried rosemary.

Pat the beef roast dry with paper towels and rub olive oil all over it. Then rub the spice mixture over the entire roast, ensuring it's well coated.

Place the sliced onion at the bottom of a roasting pan. Put the seasoned beef roast on top of the onions.

While the beef is resting, prepare the gravy. Strain the pan drippings into a saucepan, discarding the onions. Add the remaining 1 cup of beef broth to the saucepan and bring to a simmer over medium heat.

In a small bowl, mix the cornstarch and cold water to create a slurry. Gradually whisk the slurry into the simmering broth. Continue to whisk until the gravy thickens, about 3-5 minutes. Season with additional salt and pepper to taste, if necessary.

Slice the rested beef and serve with the gravy poured over the top. Garnish with fresh parsley before serving.
