Ingredients

  • 2 cups Jasmine rice
  • 4 cups Water
  • 1 cup Frozen peas and carrots mix
  • 3 tablespoons Soy sauce
  • 2 pieces Garlic cloves, minced
  • 1 teaspoon Fresh ginger, minced
  • 4 stalks Green onions, chopped
  • 2 Eggs
  • 1 cup Cooked chicken breast, diced
  • 2 tablespoons Sesame oil
  • 2 tablespoons Vegetable oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Rinse the jasmine rice under cold water until the water runs clear. Combine the rice and water in a medium saucepan and bring to a boil over high heat.

Step 2

Once boiling, reduce the heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit for 10 minutes, uncovered. Fluff the rice with a fork and set aside to cool.

Step 3

In a large wok or skillet, heat 1 tablespoon of vegetable oil and 1 tablespoon of sesame oil over medium heat. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.

Step 4

Add the frozen peas and carrots mix, and stir-fry for 3-4 minutes until heated through.

Step 5

Push the vegetables to one side of the wok, and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix them with the vegetables.

Step 6

Add the remaining vegetable oil to the wok, increase the heat to medium-high, and stir in the cooled rice. Use a spatula to break up any clumps and ensure even heating.

Step 7

Add the diced cooked chicken and stir well. Drizzle the soy sauce over the rice mixture, and continue to stir-fry for another 3 minutes.

Step 8

Sprinkle the chopped green onions, salt, and black pepper over the rice. Drizzle the remaining sesame oil for added flavor, and stir to combine all ingredients once more.

Step 9

Serve the Dairy-Free Riz Cantonais warm, garnished with additional green onions if desired.
