Ingredients

  • 400 g Rigatoni pasta
  • 2 tbsp Olive oil
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic cloves, minced
  • 800 g Crushed tomatoes
  • 2 tbsp Tomato paste
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 0.5 tsp Red pepper flakes
  • 1 tsp Salt
  • 0.25 tsp Black pepper
  • 10 g Fresh basil leaves, chopped
  • 3 tbsp Nutritional yeast
  • 240 ml Pasta cooking water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the rigatoni pasta and cook according to the package instructions until al dente. Reserve 1 cup (240 ml) of pasta cooking water, then drain the pasta.

Step 2

While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook for 5 minutes until soft and translucent.

Step 3

Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Add the crushed tomatoes, tomato paste, dried oregano, dried basil, red pepper flakes, salt, and black pepper to the skillet. Stir well to combine.
