  • 2 cups vegetable broth
  • 1 15-ounce can canned black beans, drained and rinsed
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 lime lime, juiced
  • 2 tablespoons chopped fresh cilantro

Directions

Step 1

Heat the olive oil in a medium saucepan over medium heat.

Step 2

Add the chopped onion and cook until it becomes translucent, about 5 minutes.

Stir in the minced garlic and chopped bell pepper and cook for another 2 minutes, until the garlic is fragrant and the bell pepper has softened slightly.
