Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 2 tablespoons olive oil
  • 0.5 cup sliced almonds
  • 2 cloves garlic, minced
  • 0.5 cup onion, finely chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Drain well.

In a medium saucepan, heat the olive oil over medium heat.

Add the sliced almonds to the oil and toast them until golden brown, stirring frequently to avoid burning. This should take about 3-4 minutes.

Remove the almonds from the pan and set them aside for later use.

In the same saucepan, add the minced garlic and chopped onion. Sauté until the onion becomes soft and translucent, about 3-4 minutes.
