Ingredients

  • 1 cup Rice flour
  • 0.5 cup Tapioca starch
  • 0.5 cup Cornstarch
  • 0.5 teaspoon Salt
  • 2.5 cups Water
  • 3 tablespoons Neutral oil (such as vegetable or canola)
  • 3 tablespoons Soy sauce
  • 1 tablespoon Water (for soy sauce)
  • 1 tablespoon Sugar
  • 1 teaspoon Chili sauce
  • 1 teaspoon Sesame seeds
  • 1 tablespoon Chopped green onions

Directions

Step 1

In a large mixing bowl, combine the rice flour, tapioca starch, cornstarch, and salt. Gradually add 2.5 cups of water, stirring continuously until you get a smooth batter. Ensure there are no lumps.

Step 2

Set up a large steamer on the stove. Bring water to a rolling boil and keep it boiling while you prepare the noodle rolls.

Step 3

Lightly oil a flat-bottomed plate or tray that fits inside the steamer using one tablespoon of neutral oil.

Step 4

Pour a thin layer of batter onto the oiled plate, just enough to cover the surface evenly. Tilt the plate gently to spread the batter.

Step 5

Place the plate in the steamer and cover. Steam for 3 to 4 minutes or until the noodle sheet becomes transparent.

Step 6

Remove the plate carefully from the steamer. Brush the surface with a small amount of oil to prevent sticking.

Step 7

Once it cools slightly, use a spatula to gently roll up the rice noodle sheet into a log. Transfer to a serving plate and cover to keep warm.

Step 8

Repeat the process with the remaining batter, re-oiling the plate each time.

Step 9

While steaming the noodle sheets, prepare the sweet soy sauce. In a small saucepan, combine soy sauce, 1 tablespoon of water, and sugar over low heat. Stir until the sugar dissolves completely. Remove from heat and set aside.

Step 10

Serve the rice noodle rolls warm, drizzled with sweet soy sauce and optionally topped with chili sauce, sesame seeds, and chopped green onions.
