Ingredients

  • 2 cups glutinous rice flour
  • 1 cup warm water
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 cup mushrooms, finely chopped
  • 1 medium carrot, grated
  • 2 stalks green onions, finely chopped
  • 1 teaspoon ginger, minced
  • 2 cloves garlic, minced
  • 1 cup tofu, crumbled
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 4 cups water (for steaming)

Directions

Step 1

In a bowl, combine the glutinous rice flour with warm water gradually, kneading to form a soft and smooth dough. Cover it with a damp cloth and let it rest while you prepare the filling.

Step 2

Heat vegetable oil in a skillet over medium heat. Add the minced garlic and ginger, sauté for about 30 seconds until fragrant.

Step 3

Add the chopped mushrooms and grated carrot to the skillet, sauté for 3-4 minutes until the vegetables are softened.

Step 4

Stir in the crumbled tofu, soy sauce, sesame oil, and sauté for another 2-3 minutes until everything is well mixed and heated through.

Step 5

Add in the chopped green onions, salt, and black pepper. Mix well and turn off the heat. Let the filling cool slightly.

Step 6

Take a small portion of the dough, approximately the size of a golf ball, and flatten it into a circle (about 3-4 inches in diameter) using your palms.

Step 7

Place about a tablespoon of the filling in the center of the dough circle. Carefully fold the edges over the filling, pinching to seal, forming a round dumpling. Repeat with the remaining dough and filling.

Step 8

Prepare a steamer with water and bring it to a simmer. Place the dumplings on parchment paper in the steamer basket, ensuring they are not touching each other.

Step 9

Steam the dumplings over medium heat for about 10-12 minutes or until the dough is translucent and cooked through.

Step 10

Carefully remove the dumplings from the steamer and let them cool slightly before serving. Enjoy your dairy-free savory rice dumplings!
