Directions

Step 1

Begin by heating the coconut milk gently in a saucepan over medium heat. Avoid boiling it; just warm it to about 85°C (185°F). Stir occasionally.

Once the coconut milk is warm, add the agar-agar powder while continuously stirring to dissolve it completely. Continue to heat for an additional 3 minutes to activate the agar-agar.

Remove the saucepan from heat and allow the coconut milk mixture to cool to about 45°C (113°F). This step is crucial to ensure that the starter culture survives.

Meanwhile, in a blender, add the fresh mint leaves and maple syrup. Blend until you have a smooth minty syrup.
