Ingredients

  • 1 liter Almond milk
  • 200 grams Almond flour
  • 2 tablespoons Tapioca starch
  • 100 milliliters Maple syrup
  • 1 pinch Saffron threads
  • 1 teaspoon Cardamom powder
  • 1 teaspoon Rose water
  • 2 tablespoons Chopped pistachios
  • 2 tablespoons Chopped almonds
  • 1 teaspoon Apple cider vinegar

Directions

Step 1

In a medium saucepan, bring 750 ml of almond milk to a gentle simmer over medium heat. Add the saffron threads, cardamom powder, and maple syrup. Stir well to combine. Allow the mixture to simmer for about 10 minutes, then remove from heat and stir in the rose water. Set aside to cool.

Step 2

In a bowl, combine the almond flour, tapioca starch, and apple cider vinegar. Gradually add the remaining 250 ml of almond milk while stirring to form a smooth dough.

Step 3

Divide the dough into small equal portions and flatten each portion into a disc shape about 1 cm thick.

Step 4

Bring a pot of water to a boil. Gently place the almond discs in the boiling water. Cook them for about 10 minutes. They will rise to the surface when cooked.

Step 5

Remove the discs carefully using a slotted spoon and immerse them immediately in the cooled saffron almond milk. Allow them to soak for at least one hour in the refrigerator.

Step 6

Before serving, garnish the Dairy-Free Ras Malai with chopped pistachios and almonds. Serve chilled for the best flavor.
