Ingredients

  • 1 head radicchio
  • 2 cups baby arugula
  • 2 large orange
  • 2 tablespoons lemon juice
  • 3 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup pistachios
  • 0.25 cup parsley

Directions

Step 1

Start by preparing the radicchio: remove any wilted outer leaves, then cut the head into quarters and remove the core. Thinly slice the radicchio and place in a large salad bowl.

Add the baby arugula to the bowl with the radicchio.
