  • 250 grams Black glutinous rice
  • 1500 milliliters Water
  • 250 milliliters Coconut cream
  • 2 leaves Pandan leaves
  • 100 grams Palm sugar
  • 1 pinch Salt

Directions

Step 1

Rinse the black glutinous rice under cold water until the water runs clear. This helps remove excess starch and debris. Drain thoroughly.

Step 2

In a large pot, combine the rinsed black glutinous rice with 1500 milliliters of water. Add the pandan leaves, knotted to easily remove later.

Step 3

Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer gently. Stir occasionally to prevent the rice from sticking to the bottom of the pot.

Step 4

Allow the rice to simmer for about 60 to 75 minutes or until the grains are tender and the mixture has thickened to your desired consistency. If it becomes too thick, add more water, about 100 milliliters at a time, and continue cooking.

Step 5

Once the rice is tender, add the palm sugar and a pinch of salt to the pot. Stir until the sugar has completely dissolved and is well incorporated into the rice mixture. Adjust sweetness to taste.

Step 6

In a separate small saucepan, gently heat the coconut cream over low heat until warm. Do not bring it to a boil.

Step 7

Remove the pandan leaves from the pot before serving.

Step 8

To serve, ladle the black glutinous rice into individual bowls and drizzle with the warmed coconut cream.
