  • 1 red bell pepper
  • 1 green bell pepper
  • 1 large yellow onion
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons (optional) chopped fresh parsley

Directions

Step 1

Start by washing and peeling the potatoes. Dice them into small cubes, approximately 1/2 inch in size, for even cooking.

Dice the red and green bell peppers and chop the onion finely.

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
