Ingredients

  • 500 grams potatoes
  • 400 ml coconut milk
  • 1 medium, chopped onion
  • 3 minced garlic cloves
  • 1 inch, grated ginger
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon turmeric powder
  • 0.25 teaspoon cayenne pepper
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons, chopped fresh cilantro
  • 200 ml water

Directions

Step 1

Peel and cube the potatoes into about 1-inch pieces. Set aside.

Step 2

In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Add the minced garlic and grated ginger to the onions and sauté for 1 minute until fragrant.

Stir in the curry powder, ground cumin, ground coriander, turmeric powder, and cayenne pepper. Cook for another 1-2 minutes to allow the spices to release their aroma, stirring continuously.

Add the cubed potatoes to the pot, stirring to coat them in the spice mixture.
