  • 8 ounces Chorizo sausage (dairy-free), sliced

  • 3 Garlic cloves, minced
  • 1 medium Red bell pepper, chopped
  • 2 Bay leaves
  • 2 tablespoons Tomato paste
  • 1.5 cups Arborio rice
  • 3.5 cups Vegetable broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 0.25 cup Parsley, chopped
  • 0 Lemon wedges, for serving

Directions

Step 1

Heat olive oil in a large pot over medium heat. Add sliced chorizo and cook until browned, about 4-5 minutes. Remove chorizo from the pot and set aside, leaving the oil in the pot.

Add chopped onion and sauté in the same pot until it becomes translucent, about 3 minutes.

Stir in minced garlic and red bell pepper, and sauté for another 2 minutes until the vegetables soften.

Add the bay leaves and tomato paste to the pot, stirring to combine with the vegetables. Cook for 1-2 minutes until the tomato paste darkens slightly.

Add the Arborio rice, stirring to coat the grains in the tomato mixture, and cook for 1-2 minutes until the rice is lightly toasted.

Pour in the vegetable broth, and add salt and black pepper. Stir to combine. Bring the mixture to a boil.
