  • 1 pound Boneless pork shoulder
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Chicken broth
  • 4 pieces Large flour tortillas
  • 1 medium Red onion
  • 1 medium Red bell pepper
  • 1 medium Avocado
  • 1 medium Lime
  • 0.25 cup Fresh cilantro
  • 1.5 cups Dairy-free cheese

Directions

Step 1

Preheat your oven to 325°F (160°C).

Step 2

In a small bowl, mix the garlic powder, ground cumin, smoked paprika, salt, and black pepper.

Rub the pork shoulder with olive oil and then the spice mix until fully coated.

Heat a large ovenproof pot over medium-high heat and sear the pork shoulder on all sides until golden brown.

Pour the chicken broth into the pot, cover with a lid, and transfer it to the oven.
