Ingredients

  • 1 lb Pork tenderloin
  • 3 tbsp Olive oil
  • 2 tbsp Red wine vinegar
  • 2 tbsp Lemon juice
  • 3 cloves Garlic, minced
  • 2 tsp Dried oregano
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1 tsp Smoked paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 4 pieces Pita or flatbread
  • 1 small Red onion, thinly sliced
  • 2 medium Tomatoes, diced
  • 1 small Cucumber, diced
  • 0.25 cup Fresh parsley, chopped
  • 0.5 cup Dairy-free tzatziki or hummus

Directions

Step 1

Slice the pork tenderloin into thin strips about 1/4 inch thick for quick cooking.

Step 2

In a large bowl, whisk together olive oil, red wine vinegar, lemon juice, minced garlic, dried oregano, cumin, coriander, smoked paprika, salt, and pepper to create the marinade.

Step 3

Add the pork strips to the marinade, ensuring each piece is well-coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for greater flavor infusion.

Step 4

Heat a grill pan or large skillet over medium-high heat. Once hot, add the marinated pork strips to the pan.

Step 5

Grill or sauté the pork for about 3-4 minutes on each side or until cooked through and slightly charred on the edges.

Step 6

Warm the pita or flatbread either in a dry pan or in the oven wrapped in foil to keep them soft.

Step 7

To assemble the gyros, spread a generous spoonful of dairy-free tzatziki or hummus onto each piece of warmed flatbread.

Step 8

Layer on a portion of the cooked pork, followed by a handful of sliced red onions, diced tomatoes, and cucumber.

Step 9

Garnish with chopped fresh parsley before wrapping the flatbread into a gyro shape.

Step 10

Serve immediately while the meat is hot and toppings are fresh for the best experience.
