Ingredients

  • 150 grams Fine polenta
  • 150 grams All-purpose flour
  • 10 grams Baking powder
  • 5 grams Salt
  • 2 grams Baking soda
  • 80 ml Olive oil
  • 250 ml Unsweetened almond milk
  • 10 ml Apple cider vinegar
  • 50 ml Maple syrup
  • 15 grams Ground flaxseeds
  • 45 ml Water

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a 9x5 inch loaf pan or line it with parchment paper.

Step 2

In a small bowl, mix the ground flaxseeds with the water to create a flax egg. Let it sit for about 5 minutes to thicken.

Step 3

In a large bowl, whisk together the polenta, all-purpose flour, baking powder, salt, and baking soda until well combined.

In another mixing bowl, combine the olive oil, almond milk, apple cider vinegar, maple syrup, and the prepared flax egg. Mix until all liquids are well incorporated.
