  • 4 cups cooked jasmine rice
  • 1 cup pineapple chunks
  • 1 medium red bell pepper
  • 4 stalks green onions
  • 1 cup frozen peas
  • 2 medium carrots
  • 2 cloves garlic
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons cooking oil
  • 1 teaspoon fresh ginger
  • 1 teaspoon curry powder
  • 1 whole lime
  • 0.25 cup cilantro
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Prepare the vegetables: Dice the red bell pepper and slice the green onions, keeping the white and green parts separate. Peel and dice the carrots into small cubes. Mince the garlic and grate the ginger.

Step 2

Heat 1 tablespoon of cooking oil in a large skillet or wok over medium heat. Add the white parts of the sliced green onions, minced garlic, and grated ginger. Sauté for 1-2 minutes until fragrant.
