Ingredients

  • 500 grams Fresh squid, cleaned
  • 1 whole Lemon
  • 2 tablespoons Fresh parsley, chopped
  • 2 cloves Garlic cloves, minced
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 leaf Bay leaf
  • 1000 milliliters Water

Directions

Step 1

Start by cleaning the squid thoroughly if not already done. Remove the head, innards, beak, and cartilage from the squid, then rinse under cold water. Pat dry with paper towels.

Step 2

In a large pot, bring 1000 ml of water to a boil. Add the bay leaf and a pinch of salt to the boiling water.

Step 3

Once the water is boiling, carefully add the cleaned squid to the pot. Boil the squid for 2-3 minutes until it turns opaque and curls up. Avoid overcooking the squid as it may become rubbery.

Step 4

While the squid is boiling, zest the lemon and then cut it in half. Juice one half of the lemon and slice the other half into thin rounds for garnishing.

Step 5

Once the squid is cooked, remove it from the pot using a slotted spoon and transfer it to a bowl of ice water to stop the cooking process. Let it sit for about 2 minutes, then drain and pat dry.

Step 6

In a large mixing bowl, combine the boiled squid, lemon juice, lemon zest, minced garlic, chopped parsley, olive oil, salt, and black pepper. Toss everything together until the squid is well coated.

Step 7
