Ingredients

  • 4 burger buns
  • 4 large eggs
  • 1 pound ground turkey or beef
  • 1 avocado
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 4 lettuce leaves
  • 1 tomato
  • 0.5 red onion
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon dijon mustard
  • 0.5 teaspoon garlic powder

Directions

Step 1

Begin by preparing the patties: In a large mixing bowl, combine ground turkey or beef with salt, black pepper, mustard, and garlic powder. Mix until just combined. Divide the mixture into four equal parts and shape them into patties.

Step 2

Heat a tablespoon of olive oil in a large skillet over medium heat. Add the patties and cook for about 5-6 minutes on each side or until they are fully cooked and have a nice sear. Remove from the skillet and set aside.

Step 3

While the patties are cooking, prepare the avocado spread: Halve the avocado, remove the pit, and scoop the flesh into a small bowl. Add lemon juice and mash together until smooth. Season with a pinch of salt and pepper.

Step 4

Slice the tomato and red onion thinly and set aside.

Step 5

After removing the patties, add the remaining tablespoon of olive oil to the same skillet. Crack the eggs into the skillet and cook sunny side up for about 3 minutes until the whites are set, but the yolks are still runny. Remove from heat.

Step 6

To assemble the burgers, spread some avocado mixture on the bottom half of each burger bun. Place a lettuce leaf on top, followed by a slice of tomato and a few rings of red onion.

Step 7

Add the cooked patty to each bun, then gently place a cooked egg on top of the patty. Cover with the top half of the buns.

Step 8

Serve immediately while the egg yolk is still warm and runny, allowing it to mix with the avocado and other ingredients as you bite into the burger.
