Ingredients

  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 3 large, minced garlic cloves
  • 1 medium, finely chopped onion
  • 28 oz canned crushed tomatoes
  • 1 tsp dried oregano
  • 0.5 tsp red pepper flakes
  • 0.5 cup, chopped fresh basil leaves
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp nutritional yeast

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Step 2

While the pasta cooks, heat the olive oil in a large pan over medium heat.

Step 3

Add the minced garlic and chopped onion to the pan. Cook for about 5 minutes or until the onion becomes translucent, stirring frequently to prevent burning.

Step 4

Stir in the canned crushed tomatoes, dried oregano, red pepper flakes, salt, and black pepper.

Step 5

Reduce the heat to low and let the sauce simmer for about 20 minutes, stirring occasionally, to allow the flavors to meld.

Step 6

Once the sauce has thickened slightly, add in the chopped fresh basil and nutritional yeast. Stir well to combine.

Step 7

Add the cooked penne pasta to the sauce, tossing gently to ensure every piece is coated with the sauce.

Step 8

Remove from heat and let it rest for a couple of minutes to absorb the flavors.

Step 9

Serve the pasta hot, garnishing with additional fresh basil if desired.
