Ingredients

  • 12 ounces Penne pasta
  • 3 tablespoons Olive oil
  • 1 pound Boneless, skinless chicken breasts
  • 3 units Garlic cloves, minced
  • 1 unit Red bell pepper, sliced
  • 1 cup Canned coconut milk
  • 1 cup Chicken broth
  • 2 cups Fresh spinach
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Lemon juice

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Step 2

While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Cut the chicken breasts into bite-sized pieces and season with a pinch of salt and pepper.

Add the chicken to the skillet and cook for 5-7 minutes, stirring occasionally, until the chicken is golden and cooked through. Remove the chicken from the skillet and set aside.
