Ingredients

  • 1 cup natural peanut butter
  • 0.333 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup gluten-free oat flour
  • 0.5 cup dairy-free chocolate chips
  • 0.25 teaspoon sea salt (optional)

Directions

Step 1

In a medium bowl, combine the natural peanut butter, honey or maple syrup, and vanilla extract. Mix well until smooth and fully combined.

Step 2

Gradually add the gluten-free oat flour to the peanut butter mixture, stirring continuously until a dough-like consistency forms. The mixture should be slightly sticky but manageable.

Step 3

Fold in the dairy-free chocolate chips evenly into the mixture.

Step 4

Using clean hands, scoop out approximately tablespoon-sized portions of the mixture and roll them into balls. Place each ball onto a baking sheet lined with parchment paper.

Step 5

If desired, sprinkle a tiny pinch of sea salt on the top of each ball to enhance the flavor.

Step 6

Refrigerate the peanut butter balls for at least 30 minutes, or until they are firm to the touch.

Step 7

Once set, transfer the peanut butter balls to an airtight container. Store them in the refrigerator for up to a week, or freeze for a longer shelf life.
