Ingredients

  • 2 sheets Puff pastry sheets
  • 200 ml Coconut milk
  • 200 ml Unsweetened almond milk
  • 150 grams Granulated sugar
  • 2 tablespoons Cornstarch
  • 1 teaspoon Vanilla extract
  • 1 strip Lemon peel
  • 1 stick Cinnamon stick
  • 1 pinch Salt

Directions

Step 1

Preheat the oven to 220°C (430°F). Grease a 12-cup muffin tin lightly.

Step 2

Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 6 equal squares.

Step 3

Fit the pastry squares snugly into the muffin tin cups, pressing them down gently to ensure they take the shape of the cups. Trim the edges if necessary.

In a medium saucepan, combine the coconut milk, almond milk, sugar, and lemon peel. Add the cinnamon stick and bring the mixture to a simmer over medium heat, stirring occasionally.

In a small bowl, mix the cornstarch with a few tablespoons of the milk mixture to form a slurry. Remove the lemon peel and cinnamon stick from the saucepan.
