Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup almond flour
  • 0.5 cup nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 large eggs
  • 2 tablespoons olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or spray it lightly with cooking spray.

Step 2

In a shallow bowl, combine the almond flour, nutritional yeast, garlic powder, paprika, salt, and pepper. Mix until well combined.

Step 3

In another shallow bowl, beat the eggs until they are frothy.

Step 4

Take one chicken breast and dip it into the beaten eggs, making sure it is well-coated on all sides.

Step 5

Transfer the egg-coated chicken breast into the almond flour mixture, pressing down slightly to ensure the mixture adheres well to the chicken. Turn to coat both sides thoroughly.

Step 6

Place the coated chicken breast onto the prepared baking sheet.

Step 7

Repeat the coating process for the remaining chicken breasts.

Step 8

Once all chicken breasts are coated, drizzle or lightly brush them with olive oil on top to help them brown and crisp in the oven.

Step 9

Bake in the preheated oven for 25 minutes or until the chicken is cooked through and the crust is golden brown. The internal temperature should reach 165°F (74°C).

Step 10

Once cooked, remove the chicken from the oven and let it rest for a few minutes before serving.

Step 11

Serve warm with your choice of side dishes, such as a fresh salad or roasted vegetables.
