Ingredients

  • 2 cups whole wheat flour
  • 3/4 cup water
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon coriander powder
  • 2 tablespoons oil for cooking

Directions

Step 1

In a large mixing bowl, add the whole wheat flour, salt, ground cumin, and coriander powder. Mix well to combine the dry ingredients.

Step 2

Add the olive oil to the flour mixture, and gently rub it in with your fingertips until the mixture resembles coarse sand.

Step 3

Gradually add water, a little at a time, and knead the mixture into a smooth and elastic dough. The dough should not be sticky.

Step 4

Cover the dough with a damp cloth and let it rest for at least 15 minutes.

Step 5

Divide the dough into 8 equal portions and roll each portion into a ball.

Step 6

On a lightly floured surface, flatten one dough ball and roll it out into a 6-inch round disc.

Step 7

Heat a non-stick skillet or tawa over medium heat. Lightly grease the skillet with a little oil.

Step 8

Place the rolled-out parata onto the skillet. Cook for 1-2 minutes or until you see bubbles forming on the surface.

Step 9

Flip the parata and brush a little oil on the top side. Press down gently with a spatula, cooking for another 1-2 minutes until golden brown spots appear.

Step 10

Flip the parata once more, applying a little more oil if necessary, and cook for another minute to ensure both sides are well-cooked and show golden brown spots.

Step 11

Remove the parata from the heat and keep it warm under a cloth while you repeat the cooking process with the remaining dough balls.

Step 12

Serve the dairy-free paratas warm with your favorite curry or chutney.
