Directions

Step 1

Peel the Russet potatoes and cut them into even sticks, approximately 1/4 inch thick. Try to keep them as uniform as possible for even cooking.

Place the cut potato sticks into a bowl of cold water and let them soak for at least 15 minutes. This will help remove some of the starch and result in crispier fries.

While the potatoes are soaking, heat the vegetable oil in a deep-fryer or deep, heavy-bottomed pot to 350°F (175°C). If you do not have a thermometer, a small piece of bread should brown in about 60 seconds when the oil is ready.
