Ingredients

  • 40 pieces Puri (ready-made)
  • 3 medium Potatoes
  • 1 cup Black chickpeas (kala chana), boiled
  • 4 tablespoons Green chutney
  • 4 tablespoons Tamarind chutney
  • 1 cup Mint leaves
  • 1 cup Coriander leaves
  • 2 pieces Green chili
  • 1 inch piece Ginger
  • 1 teaspoon Roasted cumin powder
  • 1 teaspoon Black salt
  • 0.5 teaspoon Salt
  • 1 teaspoon Chaat masala
  • 4 cups Cold water
  • 2 tablespoons Lemon juice

Directions

Step 1

1. Boil the potatoes in a pot until soft, about 10 minutes. Cool, peel, and roughly mash them in a bowl.

Step 2

2. Add the boiled black chickpeas to the mashed potatoes and mix together.

Step 3

3. For the pani (flavored water), blend mint leaves, coriander leaves, green chili, and ginger with a little water to make a smooth paste.

4. Add the paste to a large bowl, then mix in roasted cumin powder, black salt, regular salt, chaat masala, and lemon juice.

5. Pour in 4 cups of cold water and mix well. Adjust seasoning to taste if necessary.

6. Refrigerate the pani for at least 20 minutes to enhance the flavors.

7. To assemble, take a puri and gently make a hole in the center of the top.
