Ingredients

  • 300 grams Firm tofu
  • 2 tablespoons Olive oil
  • 1 medium, finely chopped Red onion
  • 2 minced Garlic cloves
  • 1 small, finely chopped Green bell pepper
  • 1 medium, finely chopped Tomato
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Chili powder
  • 1 teaspoon Salt
  • 2 tablespoons, chopped Fresh cilantro
  • 4 pieces Whole wheat tortillas
  • 1 tablespoon Lemon juice
  • 1 small, julienned Cucumber
  • 1 small, julienned Carrot

Directions

Step 1

Drain the tofu and press it between paper towels to remove excess moisture. Crumble the tofu into small, paneer-like pieces.

Step 2

Heat olive oil in a pan over medium heat. Add the chopped red onion and sauté until translucent.

Step 3

Add the minced garlic and sauté for another minute until fragrant.

Stir in the chopped green bell pepper and tomato, and cook until the vegetables start to soften.

Add the crumbled tofu to the pan and stir to combine with the vegetables.
