Ingredients

  • 1.5 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 1 tablespoon Granulated sugar
  • 1.25 cups Unsweetened almond milk
  • 1 Egg
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Vanilla extract
  • 0.5 cup Jam of choice (strawberry, blueberry, etc.)
  • 1 as needed Non-dairy butter or cooking spray

Directions

Step 1

In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar until well combined.

Step 2

In a separate bowl, mix the almond milk, egg, vegetable oil, and vanilla extract until smooth.

Step 3

Pour the wet ingredients into the dry ingredients and gently fold them together using a spatula until just combined. Be careful not to overmix; some lumps are ok.

Step 4

Heat a non-stick skillet or griddle over medium heat. Lightly coat with non-dairy butter or cooking spray.

Step 5

Pour 1/4 cup of batter onto the skillet for each pancake, leaving space between each pancake.

Step 6

Cook until the edges look set and bubbles form on the surface, about 2-3 minutes. Flip and cook the other side for an additional 2 minutes or until golden brown.

Step 7

Remove cooked pancakes and keep warm. Repeat with remaining batter, adding more non-dairy butter or spray as needed.

Step 8

Serve pancakes warm, topped with your choice of jam.
