  • 500 grams fresh spinach leaves
  • 250 grams mustard greens
  • 3 tablespoons olive oil
  • 1 medium onion
  • 4 garlic cloves
  • 1 inch piece ginger
  • 2 green chilies
  • 1 medium tomato
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon turmeric powder
  • 0.5 teaspoon garam masala
  • 1 teaspoon salt
  • 1 tablespoon lemon juice
  • 1 cup water

Directions

Step 1

Wash the spinach and mustard greens thoroughly under running water to remove any dirt or grit.

Step 2

Roughly chop the spinach and mustard greens, and set aside.

Step 3

Finely chop the onion, garlic, and ginger. Slit the green chilies lengthwise, and chop the tomato.

Step 4

In a large pan, heat 2 tablespoons of olive oil over medium heat.

Add the chopped onion, and sauté until it becomes translucent.

Step 6

Stir in the garlic, ginger, and green chilies, and sauté for another 2 minutes until fragrant.

Add the chopped tomato and cook until it softens, about 3 minutes.

Stir in ground cumin, coriander, turmeric, and salt. Cook the spices for 1 minute.

Add the chopped spinach and mustard greens. Stir to combine, and add 1 cup of water. Cover and cook for 8-10 minutes until the greens are wilted and tender.

Transfer the mixture to a blender and blend until smooth. You can also use an immersion blender directly in the pot for convenience.

Return the blended mixture to the pan, and stir in the remaining 1 tablespoon of olive oil and the garam masala.
