Ingredients

  • 1 cup all-purpose flour
  • 1.5 cups almond milk
  • 2 large eggs
  • 2 tablespoons coconut oil, melted and cooled
  • 1 tablespoon granulated sugar
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 1 teaspoon coconut oil or non-dairy spread (for cooking)
  • 1 cup optional toppings (such as fresh fruit, maple syrup, or dairy-free whipped cream)

Directions

Step 1

In a large mixing bowl, whisk together the all-purpose flour, sugar, and salt until well combined.

Step 2

In a separate bowl, beat the eggs, then add the almond milk, melted coconut oil, and vanilla extract. Stir until the mixture is smooth.

Step 3

Gradually add the wet ingredients to the dry ingredients, whisking continuously until you achieve a smooth batter. It should be slightly thinner than pancake batter. If it's too thick, add a little more almond milk, one tablespoon at a time.

Step 4

Let the batter sit at room temperature for about 5 minutes to allow any air bubbles to dissipate.

Step 5

Heat a non-stick skillet or crepe pan over medium heat. Once hot, lightly grease the pan with coconut oil or a non-dairy spread using a paper towel or silicone brush.

Step 6

Pour about 1/4 cup of the batter into the center of the pan, tilting the pan in a circular motion so the batter evenly coats the surface.

Step 7

Cook for about 2 minutes or until the edges start to lift and the bottom is golden brown. Flip the crepe using a spatula and cook for another 1-2 minutes on the other side.

Step 8

Transfer the cooked crepe to a plate and cover it with a towel to keep warm. Repeat the process with the remaining batter, greasing the pan as needed.

Step 9

Serve the dairy-free palacinka warm, with your choice of toppings such as fresh fruit, maple syrup, or dairy-free whipped cream.
