Ingredients

  • 1 cup Sushi rice
  • 1.25 cups Water
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Sugar
  • 0.5 teaspoon Salt
  • 2 sheets Nori sheets
  • 1 medium Cucumber
  • 1 medium Avocado
  • 1 medium Carrot
  • 1 large Fresh orange
  • 0.25 cup Soy sauce
  • 1 teaspoon Wasabi
  • 0.25 cup Pickled ginger

Directions

Step 1

Rinse the sushi rice under cold water until the water runs clear.

Step 2

Combine the rinsed rice and water in a rice cooker or a medium saucepan. Cook according to the rice cooker instructions or bring to a boil, then simmer, covered, for approximately 20 minutes until water is absorbed.

Step 3

In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Fold the mixture into the cooked rice while it is still warm. Set aside to cool.

Step 4

Peel and slice the cucumber into thin strips. Halve the avocado, remove the pit, and slice thinly. Peel and julienne the carrot.

Step 5

Peel the orange and remove as much of the white pith as possible without damaging the segments. Cut the orange segments into thin slices.

Step 6

Place a nori sheet, shiny side down, on a bamboo sushi mat. Spread half of the sushi rice gently over the nori, leaving a 1-inch border at the top edge.

Step 7

Arrange half of the cucumber, avocado, and carrot along the edge of the rice closest to you.

Step 8

Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight log.

Step 9

Seal the roll by dampening the edge of the nori with a little water and pressing to close. Repeat the process with the remaining ingredients for the second roll.

Step 10

Using a sharp knife, slice each roll into 8 even pieces.

Step 11

Top each sushi piece with a slice of fresh orange.

Step 12

Serve the sushi rolls with soy sauce, wasabi, and pickled ginger on the side.
