Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Salt
  • 5 tablespoons Vegetable oil
  • 0.5 cup Water
  • 2 large Onions
  • 2 pieces Green chilies
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 2 tablespoons Fresh coriander leaves
  • 1 tablespoon Lemon juice
  • 2 cups Oil for frying

Directions

Step 1

In a large bowl, combine the all-purpose flour and salt. Add the 5 tablespoons of oil and mix until the mixture resembles breadcrumbs.

Step 2

Gradually add water, kneading to form a smooth and firm dough. Cover with a damp cloth and set aside to rest for 20 minutes.

Step 3

While the dough rests, slice the onions finely and chop the green chilies.

Step 4

In a pan, heat 2 tablespoons of oil over medium heat. Add the sliced onions and cook until translucent.

Step 5

Add the chopped green chilies, ground cumin, ground coriander, turmeric powder, and red chili powder. Stir well and cook for 1-2 minutes until the spices are fragrant.

Remove from heat and stir in the chopped fresh coriander leaves and lemon juice. Allow the filling to cool slightly.

Divide the dough into 8 equal portions and roll each portion into a ball. Roll out each ball into an oval shape, about 6 inches long.

Cut each oval in half to form two semi-circles. Take one semi-circle and fold it into a cone shape, sealing the edge with a little water.

Fill the cone with about 2 tablespoons of the cooled onion mixture. Seal the top edge with water to form a triangle.

Step 10

Repeat with the remaining dough and filling.

Step 11

In a deep pan, heat the oil for frying over medium heat. Once hot, carefully add the samosas in batches, frying until golden brown and crisp, about 3-4 minutes per batch.

Step 12

Remove and drain on paper towels. Serve hot with your choice of chutney.
