Ingredients

  • 4 large red onions
  • 2 tablespoons vegetable oil
  • 1 inch piece fresh ginger
  • 3 garlic cloves
  • 1 teaspoon mustard seeds
  • 8 curry leaves
  • 1 teaspoon red chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon salt
  • 2 tablespoons brown sugar
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon tamarind paste
  • 0.25 cup water

Directions

Step 1

Peel and slice the onions thinly. Peel and finely chop the ginger and garlic cloves.

Step 2

Heat the vegetable oil in a large pan over medium heat.

Step 3

Add mustard seeds to the pan. Once they start to pop, add the curry leaves, ginger, and garlic. Sauté for 1-2 minutes until fragrant.

Add the sliced onions to the pan. Cook on medium heat for about 15 minutes, stirring occasionally, until the onions become soft and translucent.

Incorporate the red chili powder, ground cumin, ground coriander, turmeric powder, and salt. Mix well to coat the onions.
